Yeah the gumbo is always better after resting in the fridge overnight. I DO put a small can of tomato sauce in mine, and I DO put beans in my chili. No complaints here!

Sausage: I also am not real high on andouille in gumbo. It puts off so much grease and just not a big fan of the flavor. I typically use Holmes Smokehouse Pork & Venison.

Y'know it's supposed to be a rainy weekend. Might just have to whup up some gumbo.
 
It ain't gumbo without okra... I don't care for the flavor file’ gives it
when used as the thickener.
Just need a loaf of good french bread to go with it.


don't care for the file either.... if I want it thicker I just mix some flour and water in a shaker and add it.... yes gumbo must have okra.....
 
I haven't had GUMBO since my earlier years in Georgia. It might be time to kick it up a notch.
