Fall is coming. Gumbo or Jambalaya?

My Step Grand Mother was a true acadian from lafayette La. Her best meals were crawfish étouffée, dirty rice, hamhocks and cajun fried chicken (LOTS OF BLACK PEPPER). I love tomatoes but I never cared for the tomato based sauces and even in Italian dishes I prefer melted butter and garlic......so ...GUMBO!!

Still in the 90's here which is a great break from 107*F for the last 3 months. No cool weather until about the 2nd week in October.
