Well it did. Crawdaddys here in Shreveport. I posted about it and Jeanie did the rest. Makes CD's look lame in comparison to Jeanies but after seeing that, going back for somemore!

I really need to find a quaint Oyster Bar a cold beer and a lemon.

That sounds perfect right now! Not many options for fresh oysters in my neck of the woods. The grocery store will order them for me though.
Dang....now I need to drive to Ok City. lol
 
There was a place called "Catfish & More" in Muskogee OK near one of our manufacturing plants and when we'd fly in for the day the boys would load us all up and head there for lunch.
Perfect fried catfish filets and sides of fried okra and fried green tomaters.
Yum yum yum.

Made a blackening seasoning first..

Used my fancy cooker. Section of pipe, rebar legs, expanded metal grate and hot water heater burner.

I had to set it up out of the wind....

seasoned some of the catfish with the blackened seasoning and some with cornmeal fish fry...

The wild turkeys are thick around my place this year. They show up every time I cook outside.

Went with one blackened catfish and one cornmeal fried catfish. Topped with the crawfish etouffee...

This is one of my favorite ways to prepare catfish. Hopefully I'll catch a few more this summer.

I don't make it to that side of the state very often, usually when passing through. Lots of great fishing lakes in that area.

Sure! I use Paul Prudhomme's recipe and tweak it to suit my taste buds. It's my favorite so far.

1 TBS sweet paprika (I used smoked)
2 1/2 tsp salt ( I used about half)
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper (I used 3/4 tsp)
3/4 tsp white pepper
3/4 tsp black pepper
1/2 tsp thyme
and 1/2 tsp oregano

Shoot, at first I thought they were copying the cook from my blog since it was posted a couple of months before theirs...and they also use a version of Paul's blackening seasoning mix.. http://cowgirlscountry.blogspot.com/2016/03/blackened-and-fried-catfish-smothered.html
They use a store bought seasoning though... There are just as many etouffee recipes in the world as there are gumbos and chili recipes. lol :-D
