Using up some of the catfish from fishing and camping last summer.
Made a blackening seasoning first..
and a pot of crawfish etouffee...
went with a blonde butter roux...
added crawfish tails...
shrimp stock and fresh parsley...
let the pot simmer on low while frying the catfish..
Used my fancy cooker. Section of pipe, rebar legs, expanded metal grate and hot water heater burner.
I had to set it up out of the wind....
seasoned some of the catfish with the blackened seasoning and some with cornmeal fish fry...
fried the cornmeal catfish first...
then the blackened catfish...
and some blackened shrimp...
The wild turkeys are thick around my place this year. They show up every time I cook outside.
Went with one blackened catfish and one cornmeal fried catfish. Topped with the crawfish etouffee...

This is one of my favorite ways to prepare catfish. Hopefully I'll catch a few more this summer.
