Ken Onion with the blade grinder attachment is amazing. Once you get the technique down, it will sharpen any knife to a the maximum of it's potential. Practice on a few inexpensive knives until you have it down. The micro convex edge it puts on the blade adds to the stability. It's not the best for true flat edges like chisels, etc. But any long or curved blade - that's my go-to sharpener. I've been using that system for several years now. Best way to sharpen knives, IMO.
