THE CABIN
My "regular" carne asada recipe is far more labor intensive but I wanted something in a hurry. Since I don't have my full kitchen available up there (which makes it fun actually) I did a quick version of it with whatever I had in the cupboards of course with the exception of the meat, tortillas and fresh produce that I take up with me. Basically I just have the necessities there kinda like camping but with camping you always forget something. Or two. Or Three. :biggrin1: Fortunately there is a lot more at the cabin compared to a camping trip so it's the sweet spot between camping and home.
Started with flap meat
Pappy's and oregano. Pappy's is the closest thing to a carne asada seasoning IMHO
Sprinkled on the meat
Of course citrus is key. Blood oranges from a buddy's place and lime
I let it marinate a little
Made some chicken too
Rice :thumb:
And of course beans :clap2:
I cheated and used the PBJ since the weather was cold and wet (no charcoal fires allowed up there :tape
And done
14" tortill-er!!
Half beef and half chicken
Beans
Cheese
Cilantro and onions
Pico and salsa roja (red sauce)
Burrito served with rice, beans, pico, cold beer and a shot of tequila
Smack down the middle with beef on left and chicken on right
Beef side
Thanks for looking!
