Wanted to make paella for awhile, couldn't get it off my mind after the last batch. :-D

gathered some of the ingredients...

went with chicken, chorizo, shrimp, octopus, mussels and crablegs..

found some tasty looking chorizo..

cleaned the baby octopus..

made a stock with the shrimp shells, crab knuckles and seasonings..

used hardwood on my old cooker..

Started with the onions and garlic in olive oil..

the marinated chicken...

chorizo...

peppers, tomatoes..

added one cup of wine, smoked paprika, saffron... parsley..

when the wine cooked down I added the stock..

covered, simmered then added the seafood.

mussels..

covered til cooked through then added lemons, more parsley and called er good..

I liked it. :-D
I left out the seafood blend this time and went with more mussels and octopus. I'm a seafood lover so when I can find fresh in my area, I grab it.

Thanks again to Mr Sako for getting me interested in making paella. I love the stuff! :grin:

I had help eating this but still had tons leftover. I need a smaller pan or need to learn how to hold back on ingredients. :-D

Beautiful, Looks awesome. Palacios is some pretty good chorizo but if you ever see the Chorizo Iberico from Fermin, grab it! You won't be disappointed. Bomba Rice is the best.
