Sometimes the best thing about cooking is all the good stuff you can do with the leftovers!

My wife whipped up some of her "kinda-famous" Chicken Salad! Good stuff!

I had some leftover chicken today and did the same thing. Best chicken salad I have ever had. Yours looks great.
 
GreasePig that looks tasty! I have a bit of smoked chicken on hand.. I think I'll try making some salad with it too. Thank you for the inspiration.
 
Tuesday night I am making Moose's Cheesy Chili Gravy Beer Can chicken Enchiladas!

THAT is why I always do more than one chicken! :)
 
I love to make chicken salad with the left overs. Great looking sammy

Did you mix that with the chicken?

Yup that is the sauce. It has Dijon mustard, Mayo and hot sauce.

If any of you want the recipe let me know and I'll post it.

This is my favorite Chicken Salad but it isn't like most you have had.
 
Ok.. here is the Recipe...

Melissa's Spicy Smoked Chicken Salad

2 Cups Shredded Chicken
1 Jalapeno chopped fine
1 Small to Medium Red Onion chopped fine
1 Red Bell Pepper chopped fine (Green or Yellow work too)
2 Scallions sliced
1 Avacado peeled and diced
1/2 cup Cilantro chopped

Dressing
3 Tablespoons Lime Juice
1 Tablespoon Dijon Mustard
1 Tablespoon Mayo
Couple of good splashes of Hot Sauce
1/2 cup Olive Oil
Salt and Pepper

Mix Dressing
Mix chicken and remaining ingredients
Toss!

Make a SAMMY!

She said she found this or something close on Food Network a few years ago and made it her own. It's good!

Add a little BBQ Rub (or BBS Season All!) I do! Even better the next day after the flavors meld more!
