Big meats both wrapped right at 2hrs. Color looked mediocre enough for me

Ribs on. First butt done. 2hrs in smoke and 1hr wrapped up. Other butt has another 20mins probably
Well so far it's looking dayum good! Nice inaugural cook.

Yes. Keep in mind the meat in the middle might still not "pull", but I'm not using that.

Looking good so far, and that whole deal about sleeping thru the night and doing all of the meats hot and fast is really appealing to me.

We still slept at night when we ran lower. Meat on at 10pm and wake up around 5. This way just nothing can go wrong overnight......even with a Maverick right next to your ear :-D
Does feel weird not running a guru, but the drums are working well and the vents really react quickly to raising and dropping temp
