Your Favorite Breakfast Sausage Recipe?

Anyone care to share their recipe for breakfast sausage? I've tried a couple online and haven't been impressed. One used fennel seed and cayenne pepper.. didn't seem right.. kind of a breakfast sausage / hot italian sausage hybrid..

I like the traditional breakfast sausage taste.. with lots of sage and a bit of sugar. Want something that tastes like those Johnson Farms mini links I used to eat years ago.

Here is some I made, can't say it taste like anything you will buy in the store, but that is a good thing. It is on the mild side, so if you like it hot, I would add a little more heat.

I prefer AC Leggs / Old Plantation Seasoning Blends.

For a Southern Country Style use Blend #10, For less Red pepper and sage use Blend #29, for a mild Pork sausage use Blend #7.
