Using up some of the catfish I brought home from camp trips this summer.
Made my crawfish etouffee first...
made a blonde butter roux...
added the veggies, stock, seasonings...
crawfish tails...
let the pot simmer on low while I cooked the catfish..
Made a blackening seasoning blend for some of the fish...
and a cornmeal coating for the rest of the fish..
set up the fancy cooker... and started with the fried fish...
Wiped the skillet out, added a dab of butter and cooked the blackened catfish..
Grabbed one of each and smothered em with etouffee...
a bite of the blackened catfish n etouffee..
and a bite of the fried catfish n etouffee..
One of my favorite reasons to go fishing during the summer. lol
