Some of the catfish I caught on my last camp trip.

I made a blackened seasoning blend first...

Then started a blonde butter roux..

Next cane the scallions, onions, garlic, celery, and peppers...

added some of the blackened seasoning... I've used this in the past and really liked the outcome.

added shrimp stock and crawfish tails...

let the pot simmer while I cooked the catfish..

Went with the usual, cornmeal, fried catfish and blackened catfish..

Thanks Andy! I always go with a blond butter roux on crawfish etouffee but go with darker rouxs on gumbo. Just the way mom taught me. :grin:

Girl, I can't say how good that looks. Should I txt the coordinates of my next camp (probably the Blue River) to you? That is sooo much better than my camp food its embarrassing. Guess I need to up my game.

You have a very special talent and it shows every time you fire up one of your cooking devices. Absolutely amazing!
