Thanks again everyone. The little meat market has two ladies running the tortilla making machine and they must crank out 500-1000 of those tortilla bundles on Saturday and Sunday. By noon they almost gone. They also make a few flour and fresh corn tostadas that they make somewhere else and sell there. It's nice little market.

You should get a disc cooker if you like the concept. They make em out of other things besides just harrow/plow discs. Mine happens to be the bell end of the inside tank of a water heater. I've seen some made from the bell ends of many other kinds of tanks and they are great for cooking and frying outdoors things outdoors that would otherwise be a mess to cook indoors. They are fun to use too. I made the stand for it bout three years ago. It was one of my first welding projects.

Thanks again! Funny thing about all this is that my wife has taken a big interest in the last few throwdowns and even chooses my entry pic and critiques em. She said, "Damn, now I know why you and the Brethren take pictures of your food!" when I showed her the Collective Throwdown Thread she was in awe of the food pron! :lol:

Well, fired up the cooking disc filled up the kid's pool and just hung out with the family!

For the Pico de Gallo!

The best corn tortillas come wrapped in paper! Talk about fresh. THey were only about 2 hours old!! Just babies!!

Browning the rice. Tried Jasmine rice this time. Best dang Spanish rice I've ever made.

Rice........done.

Bacon and baloney getting browned for the Charro beans.

Get back up there.........that little piece of baloney like the HOT tub!!

Mexican chorizo for the beans.

Flores Meat Market makes a mean chorizo blend. This one went into the discada.

GOOD STUFF!

Discada meat goes in. Basically thinly sliced round and sirloin marinated in Wooster and Mojo Criollo.

Browned until most of the liquid evaps.

Just stand there and watch it drain. This is why I don't make discada too often...............Heart Attack Central!!

Tortillas getting some color and flavor.

Taco meat..............DONE.
