So, I've had this griddle for several months now getting used to it. Done breakfasts on it, smashburgers on it, steaks and vegetables. Royal Gourmet 3 burner flat top with a porcelain coated griddle.
Last night I think I hit it out of the park.
Sliced up a big ol' sweet onion, bell pepper and some jalapenos left over from making pico.
Put them on the griddle to sweat down, tenderize and slightly caramelize. I had marinaded a Nolan Ryan prime piece of fajita meat and sliced it into 3/8" strips and grilled them till slightly pink in the middle.
Finished off with some charro beans and Wholy Guacamole (since I was lazy and it was cheaper than fresh avocados) fresh flour torillas and a few corn tortillas. Afterwards I felt like taking a nap.
