Hi all,

smoked some ribs ad some home cured pancetta.

Pancetta (bacon) cured for 7 days with salt, sugar, pepper, and spices. Then hot smoked until 140f.

Ribs rubbed with salt, pepper and spices, smoked for 3 hours then mopped with bbq sauce made with ketchup, honey, cinnamon, ground cloves and hoter spices.
