Looking for a little variety

cut into ~1 inch pieces
sautee in oil on med-high for a few mins
add in some eggs (beaten), season with S&P and whatever else you like
when the eggs are mostly cooked, throw in a few big handfuls of spinach, cover, and drop drop heat to low (or off completely)
let sit, and stir occasionally until spinach is wilted
stir in some freshly grated Parmesan
