The best corn tortillas come wrapped in paper! Talk about fresh. THey were only about 2 hours old!! Just babies!!

Browning the rice. Tried Jasmine rice this time. Best dang Spanish rice I've ever made.

Flores Meat Market makes a mean chorizo blend. This one went into the discada.

Discada meat goes in. Basically thinly sliced round and sirloin marinated in Wooster and Mojo Criollo.

And I sit here looking at a limp soggy Taco Bell product that was left over from last night - NOT FAIR!!!!

the trick to Spanish rice is once you add the water/tomato sauce etc, you DO NOT stir it anymore. just let it sit until the water evaporates. that's the trick with Mexican Fideo too.

Don't be shy with the liquid. Don't stir and just let it simmer till the liqid evaporates. Keep an eye as the liquid is almost gone cause it can burn real quick.

Those are capers. I like the flavor of the salty brine in the rice. Seems to compliment it well.

That's pretty much the secret.

Thanks again. I'll give the basmati a try as well. I've got a new bag in the pantry waiting to be used for something.
