Had a little dinner party last night, and decided to make a Pork Rib Crown. My butcher wanted $100.00 dollars to make me one. I opted to make my own. Bought the pork bone in tenderloin, Frenched the ribs, and Voila I had my meaty ribs.



Trimmed the ribs and removed the membrane.



Slathered it with yellow mustard to bind the rub.



Applied the rob and cutdown the individual ribs.



Tied it up and placed it on the Kamado set-up for indirect heat at 300 degrees.



Pulled it off after 2.5 hours of roasting and spritzing with Coke, Apple Cider and Apple Cider Vinegar. Rested in a cooler for 1 hour after wrapping in foil.



Sliced up



Plated with Parsnips and apples with mashed spuds.



The happy and fully fed guests!

Great job and awesome looking food!

Wrap the exposed bones with foil so they don't blacken. It is nothing more than a presentation thing as the meat looks great.
