Smoked a couple of chuck roasts recently. I like having leftovers.
Went with a new to me rub, Kenny's All Purpose Seasoning on one.
Seasoned the second one with salt and pepper.
into the drum with a kiss of mesquite..
after the meat took in some smoke and color, I added stock and onions, covered, then let er go til tender...
First meal was smoked chuck on white. Kind of an open faced sandwich topped with gravy made from the smoked chuck drippings, garden veggies and smooshed tatoes...
Then I build a smoked chuck pie...
the hash brown crust, seasoned with Hoochie Mama...
smoked chuck, scallions, provolone....
bacon lattice...
more Hoochie...
into the drum til hot and crisp...
decided to go the breakfast route with this and slapped an egg on top..
The smoked chuck pie with hashbrown crust, bacon lattice and egg...
I like it a lot!
I know I make these meat pies often, it's a good way for me to use up leftovers. :grin:
