I finally had the chance to try out the new Memphis Pro. I'm not familiar at all with pellet cookers so this was a learning experience.
I butterflied a pork loin and did a quick overnight cure using tenderquick and turbinado sugar.
made some sausage using beef, pork, beer and seasoning..
rinsed the cured loin and covered it with sausage then topped with minced onion..
I put it in the Memphis Pro on the middle shelf and used a drip pan below ( I didn't want to get it dirty :redface
smoked using apple pellets at 275F
when the loin reached about 165 degrees I pulled it off the cooker and kicked up the heat to 375 for a skillet of jalapeno cornbread.
the jalapeno cornbread came out nice and brown on top.
the loin was moist and tender...
It was tasty!
