I've got 9 that I soaked in water overnight and put in the smoker at 10 am.

The author is correct: Those little seasoning packets are never enough. Luckily, I've got all the spices called for in my pantry.

Mark's smoked corn beef/cabbage recipe
Once the smoked corned beef comes up to temperature (160 deg F. or so), some will be frozen for later use and some will go directly into a big pot along with cabbage, red potatoes, a few carrots, celery stalks and onions then boiled just long enough to cook the vegetables are tender.

The little seasoning packets are never enough. Always throw in extra pickling spice and juniper berry.
