I bought some steak tips tonight for the 1st time. After a quick check on Google I cooked them to medium to medium well as recommended. They seemed to have a lot of marbling, but one of the reasons that cooking to such a well done state was recommended was that otherwise they would turn out dry. Can they be cooked medium rare with good results? What say the Brethren?

I'm assuming these are sirloin flap meat, If so, then absolutely you can cook these medium rare. We usually marinate. They are really nice.

I cook them medium rare as well, I don't like them as they are normally cooked, too dry and chewy.

I have a personal rule for grilled beef - never cook more that medium rare as you lose moisture and meat toughens. If you prefer meat more done then cook with moisture and use rougher cuts.
