I had never done fried chicken so it was way overdue. I took a recipe from Chef Tom from ATBBQ for Nashville Hot Chicken and changed it to make nuggets.

Took some boneless, skinless chicken thighs, cut them into smaller pieces and brined them overnight in buttermilk, homemade hot sauce and SPOGOS. Then I coated them in a mixture of flour and salt/pepper/smoked paprika . Then fried in a CI skillet. They were amazing. I would prefer them a bit spicier, the misses loved them.

That breading looks amazing!! Did you double dredge it? I can never get mine to come out like that.


No, single dredge. I think the trick is to add some buttermilk from the brine to the flour mixture. Chef Tom did the same in his original recipe and that makes for a more clumpy breading. Which is a GOOD thing.



Excellent idea, everyone I have ever known used breasts and well we all know how white meat can get. Thighs though that seems like a game changer!


Yeah, I think thighs are perfect for this and taste better.



Those will beat the fast food version every time!! They look very good.


Better meat, better breading, so yeah I have to agree :laugh:
