Decided last night I would try to smoke a meatloaf so I fired up the "ECB" which likes to run around 300 degrees which will be perfect. I went really simple and included 2lbs ground beef, 1 cup italian bread crumbs, 1/4 cup ketchup, 1/4 cup bbq sauce, 1 egg, diced onion, and for the special ingredient I added diced up pork roll. For a little more moisture i also glazed the top with bacon fat before going in the smoker. Cooked it around 90 minutes at 300 till it hit 160 and then sauced with ketchup and bbq sauce. All I can say is that it came out fantastic. By far the best meatloaf I have ever had.
20+ mph wind yesterday so I came up with simple wind block.
They loved the smell.
