Hi all I am interested cooking a brisket and a butt hot n fast in my fec120. Any recemondations would be much appreciated. Also wondering about St. Louie ribs. Can they be done the same way in the 120?
 
Dunno about the FEC, but if it's anything like a Yoder then it doesn't produce much smoke over 275-300.

If I want to cook fast, I start it at 180 for an hour or two, with an amazn tube so that it gets enough smoke. Then I crank it to 300+ for the rest of the cook.
