When I get one of these babies, I like to do it right.
Made a really fantastic rice pilaf with spices and carrot and saffron for a bed, and the fish was dusted in flour seasoned with turmeric, pepper, and fresh lemon with EVOO, and finished with a piquant Tamarind sauce!

That is one top notch plate! Nothing better than fresh fish you've caught yourself.

That looks fantastic hoping to catch some Red Snapper in the Gulf of Mexico in the morning.

Same here, but I'll settle for some redfish or trout.

I wish.
Sadly I have to buy my fish these days, or barter for them.
I need a fishing mate who will give me one and I cook one for him/her, that is what I need!
