Vicariously celebrating a Brethren Birthday. Surf and turf. Unfortunately I went with crab cakes and when I opened them they were a solid blob sitting in bottom of bag. Indicated to me they had been frozen and thawed completely and refrozen. They’re going back. So rib Eye and Bacon Wrapped asparagus and the surf is blackened salmon. Some random German Sausage. Tiernan SOB with mesquite coals and a small oak split. Steak was marinated overnight in mustard and Worcestershire. A generous layer of Oakridge Carne Crosta. Reverse seared to 127 then wrapped tight to allow juices to distribute and leak.
