My supplier dropped off a 40# box of chicken thighs. Grill them, Smoke them. I'm at a loss. I grilled a few, they were OK. Any one got a nice tasty recipe

I would, Thank you any suggestion

iv'e done 40# of chicken 1/4's on a grill. it's a lot of work but it's good. smoking is easier but the skin doesn't come out very good. thighs are nice and moist so they are easy to do either way. you could smoke them till done then put on grill for a while to crips the skin. it's really up to you. but a word of warning... i stick (check temp) on every peice of chicken i make. you can have a small peice next to a larger one and the smaller one wont be done. depends on how much you have on your smoker and where your hot / cold spots are. good luck :-D
 
Dust with Yardbird and smoke at 275 until 180 degrees. Toss with sauce and brown sugar. Refrigerate in steam pans. Drizzle with sauce, reheat at 300 for an hour.
 
I've made pulled chicken with thighs. Next time I do, I'm going to brine them first. I just season with salt and pepper so the chicken flavor doesn't get lost.
 
Smoke them at 325-350. Go easy on the wood...light smoke. 180 is a little too done for me...but then again I rarely temp chicken so what do I know, really?

Season and/or sauce as you desire. I DO NOT like chicken that has a dry rub on it. It doesn't suit my taste.
 
Ooh, sounds good Bama Q. What kind of white sauce did you use? Your own recipe?
