Make sure you calibrate. Honestly those are useful for large cuts like brisket, pork butt of turkey. It so much for a filet of fish. You might be getting bad readings. Have you bought a thermopen yet? If not, get one. That is my go to for fish
 
Congrats on the Rec Tec Chet! I am sure you will love it. The salmon looks really good too! I prefer mine little less done than the wife. At 148 that should have been well done, were you at the thickest part? Maybe next time double check with an instant read.

You might consider cooking your salmon on a cedar plank. I always have fantastic results and the cedar smoke adds a great flavor profile. I don’t worry about IT of the fish but rather have it flake apart in center of fillet. Good luck,:thumb:

Yes I used a cedar plank. Do you pre soke the planks in water or not?
