Thought I'd fire up the grill this afternoon and cook some nice loin strips from SAMs. Seasoned with Jocko's mix and got a base fire of charcoal going then added oak splits.

Had a six second fire going, so flipped after six minutes.

Were medium, juicy and delicious! I'm really digging this Santa Maria style seasoning and cooking style. Am also lovin the Argentine style Parilla cooking surface much better than the expanded metal I had on my old Santa Maria BBQ Outfitters pit.

They really do, sunra! The sizzle kind of makes a "cupped" sound, like it's in a small hallway. At some point, I'm going to do a slower cook and see what that's like. Any suggestions on what cuts?
