Made a breakfast pizza on the campfire one morning...
went the easy route and brought store bought dough with me.

Started with some of my home canned chorizo...

then cooked, cubed tatoes and scrambled eggs...

scallions, caramelized onions and a bit of smoked cheese...

I let the pizza cook over the fire to give the crust a head start...

after the dough had risen a bit, I added heat to the top...

It didn't take long to heat through, melt the cheese and brown the top...

topped with scallions and crisp bacon...

Rain came one morning. I couldn't use the tractor rim, so I used the little charcoal cooker ...

The griddle works great for this. I put the hot coals under one side...
fried the bacon first..

rolled some hatch chiles in my cornmeal fish fry mix...

scootched the chiles over and cooked the hash browns...

I love the combo of fried chiles and eggs.

I learn something every time you post. Perfect crust and toppings melted just right on that pizza. Those hatch chilies are on my todo list too.

Those chiles are addicting when rolled in fish fry and browned in butter. Hope you give them a try sometime!

Thanks Mike! I fried a couple of catfish while there. Used Ebjack's fish fry coating, it was delicious! :grin:

I've got 3-4 hatch medium green chiles in the freezer that I've been thinking about how I should prepare them... and I think your technique just won-out!

Is the fish-fry recipe on your blog or should I just do a search here (or is it a family secret)?

Or do all of Oklahoma State Parks have fantastic

Thank you Shadow! I make a fish fry coating using corn meal, a little flour, cayenne, salt and lemon pepper but Zatarains works! https://jet.com/product/detail/8c70...15&gclid=CNmq-sOR1M8CFeMAfwodI_kCoQ&gclsrc=ds

When I make my own, I use about 2 cups of cornmeal, about 3/4 cup of flour, then add the salt, cayenne, lemon pepper to taste. I usually make it by "color". lol

Not new cookers. I've had them for several years! The little charcoal cooker was made by a friend. I use it a lot, but it's kind of heavy.
The tractor rim... I've had for years too. They're not fancy cookers but they work.

You had me at breakfast pizza. Seriously, those are some of the best camp breakfasts I've ever seen. :clap:
