hey guys, im new to this "sport" and already want to build a uds. im going horizontal and use indirect heat ( coals to one side ) i read a couple of times not to let the coals touch/rest against the drum. is this because of airflow or ashremoval or something other ?
 
When your coals touch the side of your smoker, you lose a lot of heat. Imagine touching a hot cast iron skillet compared to holding your hand a couple of inches away.
