Ultimate Cajun Fatty with Gumbo Gravy (w/ pr0n)

Decided to throwdown with my fatty skills and see how it measures up.

Decided to stuff some sage breakfast sausage with some Don's boudin and slices of pepper jack cheese. Wrapped it up in a bacon weave and threw it in the fridge for later...

Once the kettle was up to temp, I threw everything on. Had to cook up the other 4#s of boudin and will take some for lunch this week...

Since I was making the gumbo into a gravy, I thickened it up with a flour slurry...

Cut the bread and placed it open face on the plate and topped it with fatty slices...

Topped the bread and fatty slices with the gumbo gravy and it was served with a side salad with homemade vinaigrette.

What tha hell! A Texan playing with boudin and gumbo! :shock:
All I can say is after that meal you should be made an honorary cajun. Damn that looks good!:thumb::clap:

I grew up in Louisiana and left when I was 20 (that was 24 years ago :-?) You can't beat the food! I don't eat it as much as I wish I could!
 
Oh I forgot to ask, why doesn't your weber kettle have a name? All your other cookers do! :lol:
 
Now that's a great looking meal. I really need to try a fattie. that's one thing I have not cooked yet. not sure why.
That boudin looks great. Never tried it but heard by others it is really good.
