today I decided I would try a new spin on a fattie so this is what I did.
Mixed up some chopped jalapeños and diced up some pepper jack cheese, took a couple of eggs and did a three min boil, then rolled the sausage flat on wax paper put the eggs in the middle with the cheese and closed it back up, sprinkled some rub & bread crumbs on it then wrapped it in the wax paper putter in the fridge for a hour so it would firm back up and then slapped it on the pit. I'm also doing an new injection on my brisket will let you know what I think of it with pic's.
Here are the pics from lunch, Oh yea I think the next time the fattie would be great over a biscuit and some either hollandaise sauce or pepper mill gravy?
