This smoked meatloaf bandwagon? I am completely on it.

Decent cook on the offset this afternoon.

1 lb Meatloaf - I buy it at a Polish butcher because it's really tasty and saves me a ton of work
2 racks of tips
2 bone in pork chops (make ahead, will sear and serve tomorrow night for dinner)

First time smoking meatloaf. Rubbed it with Moo'd Enhancer beef rub and on the cooker at 275-ish. It probably cooked for 90 minutes or so. Ketchup slather halfway through. It was absolutely delicious and I couldn't pass up a quick batch of mashed with gravy to compliment.

Tips are resting in the wrap, but those are going to get chopped and packed for lunches, so I'm not really all that concerned with what they look like right now :D
