Heavens read and catalogued, Sir. The pending equinox is favourable to our efforts because the path of the sun meets our equator. In other words the sun (read this as son as in child/Noobian) meets the hottest ring on earth (read this as the world wide veterans BBQ fire). It's all Greek, Sir, celestially Persephone returns to her old man Hades underground, another symbol of 'veteran victorious over noobian'. We will succeed with honour, smoke and fire particularly on the autumn equinox. It's natural order, Sir, Mother Nature has called this victory herself and the Noobs have hail to pay, Sir.

A most favorable report indeed!

This is the most bountiful Noob harvest of all time. Hopefully they persist with us die hard veterans through the cold barren winter.

We may have to do this again next year.

Admiral Bigabyte. Apparently the Diplomatic Mission to Amsterdam has failed to secure an unconditional surrender by the Noobian Empire. They are a fierce and prideful bunch but bordering on fanatical. They would rather jump off cliffs than be subjected to living on reservations. I took some time today to perfect a secret mission in my shed. It is referred to as the Neuse Forest Project. I have obtained some seemingly harmless supplies using legal measures, which have allowed me to construct a weapon of mass destruction. I am hoping for a peaceful resolution to this crises but desperate times call for desperate measures. I will deploy this weapon upon your orders. I give you "Little Boy"

Rib eye on the bone, grilled it on the BSKeg and served it with a steamed kipfler potato with EVOO and butter and sea salt and pepper, same seasoning for the steak.

but here it is 2 pork Tenderloins, both chipotle encrusted, one butterflied stuffed with Chirizo and cheese.

just some down and dirty hamburgers tonight. I started with some ground chuck from the butcher's shop that was ground right in front of me. I'm used to buying packaged ground beef from the grocery store so this was a treat for me. I mixed it with some ranch seasoning, ground chipotle, chili powder, garlic powder, onion powder, freshly ground pepper, and kosher salt. After lighting incorporating everything and making patties, i put them back in the fridge to cool out while i got everything else prepped.

i then fired up the wsm for a temperature of 300 degrees. While i waited for the smoker to heat up i pan fried some center cut bacon. After spending the first half of my evening in the kitchen i decided i'll need to start looking for a quality cast iron skillet so i can move more of my operations outside.

prepped some fresh avocado, iceberg lettuce, tomatoes, and some colby-jack slices of cheese.

after the wsm got to temp i threw on a couple chunks of hickory and slid my meat on in for about 30 minutes. Wifey prefers her burgers well done so i oblige since she lets me purposely sit on the deck drinking beer these days. Otherwise i would have only left them on for about 15 minutes to get a medium rare like it should be. Pulled them off and let them rest while i heated up a grill pan over medium high heat (yeah i could have fired up the grill but we had a storm rolling in so i ran for cover like a noob). Once the pan was heated i added some butter and then the smoked patties until they had a good char on both sides, about 3-5 minutes a side. Only thing left at that point was to construct the beast.

Toasted the bun with some mayo slathered on the bottom and ketchup/mustard on the top. Then i added all the pieces from the burger construction station before sitting down and shoving it in my face.

Not sure if this is an official entry. I'm thinking i'll keep putting up what i can then make a game time decision closer to the equinox.

Official TD Entry Chorizo & Cornbread Stuffed Chicken

As the battle rages between the Noobian Armada & the SS Farkanaut both sides lob devastating salvos at one another yet no side has yet to deliver a fatal decisive blow.

Aboard a Noobian dreadnaught a bold plan begins to take place. A team of Underwater Demolition Specialists slip silently in to the water carrying a payload which will be sure to send the Farkanaut to the bottom once and for all.

The U.D.S. team afixes the device to the hull of the Farkanaut below the waterline and outside the ammunition locker to ensure maximum devastation. They arm the device and patiently, calmly make their way back to their home aboard their Noobian vessel.
This summer I have fallen in love with the technique of boning out a chicken stuffing it full of delicious goodies and then throwing it on the kettle over indirect heat. For this go round I decided to use what I had left in the fridge to concoct a chorizo and jalapeno cheddar cornbread stuffing.

Started by adding browned pork chorizo to the crumbled leftover cornbread and then added some chicken stock which I had used to deglaze the pan that browned the sausage.

I then took a lovey yardbird

Layered on a generous amount of the stuffing.

Then rolled and tied, rubbed with butter and sprinkled with Tony C's.

It then went onto the weber over indirect heat with a handful of cherry pellets added. I've been using a small handful of cherry pellets at the beginning of my chicken cooks lately more to add color to the chicken than to add a lot of smoked flavor.

While the chicken was cooking I fried up some leftover purely naked fatty and made some fatty, buttermilk gravy.

After about 45 minutes on the grill I pulled the bird and rested for 10-15 minutes.

While the bird was resting I sauteed up some collared greens with some garlic, shallot, red pepper flakes and a little cider vinegar.

Then it was time to slice the bird.

Darn good stuff if I do say so myself.

As the Underwater Demolition Specialists make it safely aboard their vessel a massive explosion rocks the Farkanaut. The concussion can be felt for miles around and the blast is strong enough to lift the whole of the Frakanaut completely out of the water.
