I'm here to air my sins in hope that people after me will not do the same. I'm not sure if I'll be able to get through telling of my experience without it breaking me down.

It all started because of my wife (don't most bad stories start off like this).

A friend of hers is in charge of some Fundraising Gala event. It's for a group of ladies that want to give back to the community and "play host" for an evening. Usually they put on some dinner/dance thing with live and silent auctions. I get dragged to these and hope they have a casino night, a good live band and an open bar. That has happened only once but I can keep on dreaming. Anyways, my wife's friend decides they are going to do something different and fun this year. They are going to have a Country Fair. All outdoor event (except tents for live and silent auctions), horse shoe tournament, old time games, hot air balloon rides, Country concert and a.......Chili Cookoff. They have been having a hard time with getting teams to sign up because the prizes are ribbons and you are feeding the public from the tickets they bought. Local Fire Departments and a couple of restaurants have stepped up, but they needed one more. So I said I would do it and promote my catering gig I do on the side while there. I had my wife sign us up. I get an email from my wife's friend thanking me profusely and saying she can't wait to eat some of my BRISKET CHILI.....:shock:
I called my wife and told her I was just planning on making up some basic chili for the masses. She said they had two categories, which was Most Hot and Most Unique Ingredient and she knows I don't make spicy chili. I told her for this, I would have. Can we change it.....NOPE.:evil: Mostly because it was for this coming weekend and didn't need to rock the boat.

Alright....so normally for my brisket chili I have some left over brisket in the freezer from some other event or what we don't eat. Well, this is going to be for 200+ people so I'm going to have to cook up a couple of briskets just for this. Yes, you read that right. I'm cooking a couple of briskets specifically for Brisket Chili........:doh:

I have not been here long enough to be able to absolve you of your sins. I can only commiserate with you and mourn your loss. A travesty has indeed been committed but I trust your faith in the Brisket Gods will bring you the peace you seek.
 
Brisket chili's only a sin if you put beans in it.

Otherwise it's just a dang expensive pot of chili.
 
I'm assuming you had more than one "taster" as you were chopping those freshly cooked briskeys so techncally everything else was leftovers By my reconing all is good. But hey, I'm a "glass-half-full" kind of guy.
 
I'm confused as to what you did wrong :confused:

It's very hard to make brisket chili without brisket, so cooking brisket to make brisket chili is normal behavior to me.
 
May be its just me 3 5 lb chubs of Grind meat from HEB smoked is much cheaper and I'm pretty sure there might be a lil brisket in there some place. If ya sell it as Brisket chili there aint no one gonna know but the cook. :blah: "Oh yes ma'am this is brisket I had the butcher grind it special":biggrin1:
 
Aaaaahhh!!! How could you! Woulda did the bait and switch with a couple of chuck steaks. :spy:
 
Find me a cheap white bun and some sauce, that there is the start of some good sandwiches!


er...I mean chili
 
Ive got some footage of when I first did the Charity Brisket BBQ for the church. They had done it for years and had tough brisket. So they would bring food processors and mulch it up. Then I did my stuff... they still mulched the **** out of it (hell I am surprised they didn't make a smoothie out of it) but we sold the points by the slice.
 
What with you being from Texas and all, Should not be a problem to procure another beef critter. Good on you for the charity event and best of all, the Wife is happy.

This. I find no fault in cooking a brisket for the purpose of further enhancing it by melding it into a chili. Peace be upon you.
