Trim more fat and they'll fit better.Went Ahead and tossed in the Brisket that’s been in my Fridge All Week - 16 lbs. Be Tight to put 2 this size on the top 2 Grates but 2 - 12-14 lbs would fit on top 2 grates. Bottom grate is a few inches narrower so just 1.
Just Put it On so it'll be my Midnite snack......... Hit the charcoal with weed burner thru ash door for about 2-3 minutes with exhaust full Open and top chute door Open, Let it run about 15-20 minutes then closed top chute door and left ash door open for another 20-30 minutes then Closed it. Leveled out about 280* right about 1 hr (Total) and put Brisket On. I usually run 300*ish- after temp recovers from Brisket I'll bring it up to 300* - by opening ash door 2" for a few minutes. I run exhaust about 2/3rds to 3/4 after it's cruising.........
