Looks good from here!!! What's this Nashville you talk about?

FYI, I smoked jerky today on the Copperhead and it held good temps 8 hours straight. I think it's gonna make smoking sausage easy.
 
Here's the samples from last night I cooked in the oven. I have some going in the smoker today. The "nashville" version was great. It doesn't taste really like the actual nashville fried since there isn't any frying or skin, but tastes like a good spicy chicken sausage.

The chicken heart sausage was well worth making. The texture is like a beef sausage and tastes great. I will be making more of it with other flavors. The great thing is it is super cheap at $.99/lb and already perfectly sized to go into any grinder!
