Barbacoa (Carbeza) Tacos!

Just sharing something as the title, Barbacoa de Cabeza, brought back lots of memories for me when we cooked the actual cow head in the ground back with my Grandfather. Here's a cool vid that shows the process pretty close to how we did it other than we used foil and burlap. Excuse the Argentinian Spanish, but I'm sure the message will shine through.
