Applewood Smoked Meatloaf

Mine is at 151 degrees on the LBGE. I should be dining in a few minutes. It smells incredible and I'm darn hungry....I'll give a full report in an hour or so.

Pulled it off at 160 and enjoyed with salad, baked spuds and family. This was a great meatloaf. I indirect cooked it with a 13" stone and drip tray on a woo3. I started in a bread pan and drained the grease off when it hit 120. I then dumped it out, upside down, on the grate and cooked to 160. total cook time was just at 2 hours. Well worth the wait.

Beautiful Ross! Thank Jackie for allowing us to see her recipe. When you said red pepper, did you mean red peppercorns or something like cayenne?
