Not just for the fall or winter - cranked up my Royale Fab direct heat cooker for some hatch green chile meatloaf and scalloped potatoes with hatch chile pepper jack cheese

Scalloped potatoes went 90 minutes covered and 30 minutes uncovered

Meatloafs were about 1.5 pounds each - after 30 minutes, I mopped them about every 20 minutes - total cook time was about 1 hour and 20 minutes







Just ran lump charcoal and a couple small splits of cherry wood - ran it about 325 - even got me a smoke ring



 
Ditto loving smoked meatloaf and those look great. I need to experiment with cast iron on the grill. Do you heat the skillet before adding the food, or do you put the skillet with food on/in the cooker cold?

Skillet was greased - took it out of fridge about an hour before I put it into the direct heat cooker - went in when temp was 250 and raised heat up to 325
 
Was just 3 of us - my dad turned 85 on Thursday so we had him over for supper

Plenty of leftovers for sandwiches and snacks this week !
