Adding heat to sauce

I'm with Mista. I like to use cayenne for that subtle burn that will begin to build slowly at the back of the tongue and throat.

Both Joe and Plowboy are correct. The problem with Plowboy's suggestion is finding and grinding enuf seeds to make a batch. You will need a respirator or SCUBA gear. If you then boil it, same thing happens, only worse. I'm relatively sure the real hot sauces are pretty much prepared the same way. So you pay someone else to take the precautions.

Personally, it it were me, I'd just add one dried hab crushed with a morter & pestile (SP?) to a gallon or so of BBQ sauce. Or emulsify one dried hab in a pint of BBQ sauce THEN add that pint to the gallon untill the desired heat is achieved. The latter is the probably the best way to go. If it's still not hot enuf, just repeat with another pint.

I've got plenty of seeds form this years crop of smoke-dried peppers. Maybe I'll try it (with all windows open).
