Anybody figured out if a better controller can be put in these.....? :confused:

Yes.....I've seen Savannah stokers mounted sideways or with boxes. The rec tec wifi seems to be popular as a mod also. It's only $100. I have a pit boss but not a vertical. It keeps temps well enough but there are risks, especially at low temps, mostly of flameout.

Best I can tell is it helps to follow the procedure for start up and shut as mentioned in instructions. I still dont trust it as set and forget, only cooker i trust on autopilot is a naturally aspirated drum.
 
so five days since you guys started buying these and nobody's even fired one up or cooked something ?

I'm waiting for Jason to cook and give his thoughts. Mine is still in the box in the garage. It was way too cold this morning for me to even think about trying to assemble the Copperhead smoker. So I cooked the brisket today on the Big Kamado Joe. The pellet can wait.

I picked mine up while traveling on a work trip. I set it up and did a burn out earlier today. I'm about to do a biscuit test on it, and I'll do the fatty initiation on it tomorrow.

I'm curious how many people plan to use the water pan? I have it in there as an additional heat diverter at this point, but I've never cooked with a water pan before, so that's new to me.

Soooooo. Rethink that comment from a guy that just covered a hot dog in ketchup, added it to his kids leftover chicken tenders covered in chili, spicy doritos and a turkey burger.......

Ive always use a water pan in my smoker. Whether it’s an offset or vertical. I prefer the texture of the rub when water vapor is present.
 
Ok. Assembled one. Took 1.5 hours but i was watching tv. Bigger than i thought it was. I'll fire it up tomorrow. Have a fatty thawing and a couple leg quarters. Probably throw on a couple meat loafs too. Don't plan on using water the first time. I'll do a biscuit test if i remember. Dang jason pushed me over the edge...

Don't forget some cheese and one sliver of jerky.

Just put some beans in the tray to catch all the drippings...
 
Biscuit test completed! Pictures included for those that are interested. The attachments should be in order from the bottom rack, up to the top. My floodlight washed things out a bit, but it should still get the point across.

How long did you cook them? The hot spots don't concern me as much, as the fact that so many aren't browned at all.
 
Is the right side that much hotter?
