Doing a little bit of traveling to SLC for work at our other office. Wanted do do bbq for them and one of our SLC guys cooks a little too so had access to his smaller traeger. But to cook for 40 it might not do the job so luckily he has a friend with another traeger to join the show. Staying at another buddy's where we took both the smokers. I’ll be the primary guy cooking on 2 cookers I’ve never used and I have around 100lbs of meat with 7 different kinds to toss on.

Also doing 4 sides for the party. I’m super psyched for tomorrow as my favorite thing is brand new stuff with lots of people to feed :becky:. Never cooked on a pellet smoker and still want one in my arsenal.

So here’s the deal so far……….

Picked up some of the meat the the SLC Restaurant Depot which is just as awesome as the ones in Atlanta but they had these awesome carts with 2 levels that we don’t normally have. Pretty sweet. Got a 18lb turkey, 20lbs of butts, 20lbs of spares and baby backs, 18lb brisket

Then we went to Costco and it is apparently one of the largest in the US and it was freaking huge. Super jealous of their meat selection as if my Costco in GA was like this I might not need RD. Full packers, Prime beef and tons of selection……And the capper was the beef ribs. I didn’t think I needed more food, but they had beef ribs so got 20lbs of that and about 5lbs of fish.

And got 3 of the 4 sides done tonight which are mac, pasta salad, coleslaw (no pics yet). Will do baked beans tomorrow. One of the macs got some dried jalapeno and ghost chili :-D

Not sure how the pellet cookers work, but going to roll hot and try to time all 7 meats to be done around the same time. I’ll be starting alone in the morning with my friend joining to help later on (he has kids so letting him sleep in). More to come tomorrow. Happy weekend!
 
Looks awesome so far! A bit late for the advice I suspect but you might want to get a few hours the meat at a low temp before switching to something hotter. One of the benefits of pellets is that it's pretty easy to run them at night without missing sleep
 
I'm sure that today will go down as another epic TQ cook.

Ya I'm pretty interested. Even with 2 cookers I know I'll be finishing butts and brisket in the oven. No way around that with 5 other meats to cook. But once wrapped heat is heat. Smoke flavor will be less of course, but I'm sure still really good. He doesn't have an amzin tube so maybe I'll throw a few sticks in the hopper :becky:. My buddy/co-worker who actually cooks on his traeger and knows what to do is taking care of his kids and then over here later.

I've certainly seen food cooked on a pellet cooker, but never touched one myself. I still want one, but don't need one :biggrin1:.
 
Getting the big meats ready and on at 7:30 local (MST). The money muscle on the right is one of the best I've ever seen.

Still planning the rotation. Thinking once the brisket/butts come off put all the pork ribs on there. Smaller cooker will get all the beef ribs and then probably the turkey. Then the fish on something :-D.
 
Turkey

How are yo preparing the Turkey and are you going slow and long with the temp. or are you cooking it at the 350-375 range as some suggest? I bought a TEC REC grill for my home use and so I am going to smoke a turkey for Thanksgiving...love to have your imput.

I'll spatchcock it more than likely and roll 375. I like hot on the turkeys.
 
Beef ribs on around 8:30. Giving them 6hrs to be done around 2:30'ish then turkey on that cooker. That is the plan for now at least :loco:. My friends have a few little humans and they like to help putting rub on and they also helped put them on the smoker. I said "put it on" and one of them literally threw it on the smoker and it was awesome :-D.

Ya too late for that :mrgreen:. I know it helps to run lower and thought about doing it overnight, but just decided to roll it all today. It is a weird feeling just sitting here watching them and not having to do anything.

Walked out and the larger smoker read 100 :twitch:. Called my friend who said it may have jammed. Was instructed to shake the pellets around, turn it off and on, put it on smoker and that got it back up to where it needed to be :-D. Glad I didn't run overnight :mrgreen:.
