UnPhortunatly my meat probe was kaput and my experience with big pieces of beePh is low...too bad because it was my Phirst tri tip.
I probably smoked it too long bePhore I seared it.
Also too bad about the rub,I made a concoction with some lemon pepper and celleryseeds that I got Phrom a Dutch Sister and Brother Castelli.
When I was cutting the meat through the middle I discovered I was using the wrong knife..I said Phark it and cut the whole thing up with the same knife...the meat was ruined anyway.

The twice baked potato didn't came out well either...the feta wasn't such a good idea and the potatoes were dry and crumbly-ish.

Tuesday I had a guest,I made springbok and kangaroo steak rubbed with Raising the Steaks.
I'm not a Phan oPh throwing Phood away so a gave the taters and tri tip another chance.
I made some sweet n spicy bean stew with the tri tip and mashed up the taters...the taters only needed some butter.

Moms gave me some Phresh andive,beans and lettuce Phrom the garden and she also bought me 2 bottles oPh curry spice ketchup.
On top oPh that I also received a box with smoked garlic Phrom Smokey Al (Holland).

Dessert was too much oPh the good stuPh on a small plate...it went all down the hatch though!:becky:

The last few weeks I made some beef that looked quite good in my eyes,nice and red.
The tri tip didn't looked so good as the Jewish fillet from last friday.

I must say that the tri tip was still juicy (maybe cause of the resting I think)
but it was a little bit chewy on some parts.
 
You are being too hard on yourself.............I'd sit and eat, and eat ALL of your cooks Brother. I see not a dang thang wrong with em!

But Curry Spice Ketchup?!? It's it tomato based like normal ketchup? I'm thinking that would be amazing with some sweet potato fries.

Yep,especially with fries...hotdogs,brats,porkchops.
Or between your grilled cheese sandwich...yum!
It's a sort of all purpose sauce like ketchup but with more flavor and spicyness.
 
I have made Tri-tip that looked a lot worse - without a faulty temp probe! You got nothing to be ashamed of there Phu! Get your thermo and knife right, grab another Tri-tip, and I am sure you will get results that you are going for.
 
Ya not so bad!

Instead of smoking, try searing over high heat first to get a nice char and then cook indirect until about 130 or so. The key is to then let it rest for a good hour or so, covered in foil so the juices move back to the center. Believe it or not, you can actually get to know when a tri-tip is done by squeezing it a bit (with gloves) and feeling it for doneness. Takes some practice, but it is the same theory as pushing on a steak with your finger to tell when it is done.
 
Phu - Doesn't look near as bad as you make it sound. To be honest, it looks good! With that being said, what the hell did you cut that tri-tip with? Your teeth? Your finger nails? A chainsaw?:becky:
 
I agree with everyone else, it just does not look bad at all. Bummer if it tasted bad though. I would have eaten it.
 
I know what Phubar means looks can be decieving,,,I have cooked meat that looked good enough to place in a magazine photo contest but was pityful in quality...Only the good cook knows when his food is done right

Phu, thats not THAT bad...a little well done for me, my wife would love that!:p
