G'Day Bruces!
Last night I broke out the WGA for the first time in these new digs. I'd bought some tri tip from my new butcher shop (The Meat Hub).
This cook I used the one with Uncle Chris' steak seasoning. First time using it. The other onces got the Oakridge treatment and have been Vac sealed.
Lit the WGA
Got it going nice with a blower!
Banked the coals to one side and put on the tri tip indirect. Lid on. Intakes damped down about 80%.
Not long after that it was flippety flip flip.
Looking very nice:
Took it off to rest. Can't waste good coals, so threw on some brats and zucchini and beans.
After a bit of a rest and a few more beers, dinner was served:
Tri tip like this, is bloody wonderful. This is a perfect medium which I feel is good for tri tip.
Brats were pretty good too.
