Niman Ranch Babybacks - Wow, forgot how much smaller natural can be

I had bought some all natural brisket from a local farm today.. It looked a lot "fresher" than regular RD cryovac type brisket but since th weight was the same I didn't notice as much...

But tonight I was in Harris Teeter and saw one rack of Niman Ranch All-Natural BabyBack Ribs.

What caught my eye (aside from the $8.99/lb) was the marbling and more noticeably, how much smaller these ribs are compared to the typical babyback rib at a Costco, BJ's etc.. Smaller in both length and thickness...
Haven't seen ribs like this size in many years... forgot they can be this size.

The weight on this rack was 1.93 lbs. I'm going to cook it tomorrow and see what kind of time this takes.... :confused:

MilitantSquatter it is very hard if not impossible to find true BB ribs. A real BB rib is 1lb or less, anything over 1lb is a loin rib. All of us myself included call loin ribs BBs.
