Just bought a cheap Brinkmann Cabinet smoker for last fathers day. It is an okay smoker but had many problems.
1. Poor air control
2. Small fire basket
3. Temp gauge was completely off.
I ran through a bunch of modifications and am pretty happy with the way it turned out.
1. New firebasket, 12" x 12" x8"
2. Nomex gasket
3. New door hinges
4. 1" ball valve
5. Sheet metal
6. RTV High Temp Silicone
7. New temp therm
I did a smoked beef shoulder last week for about 7 hours in smoke then finished off in the oven, didn't want to stay up all night. It held temp very well just had to bump the ball valve a couple times. I still had about 1/3 of the charcoal left in my firebasket when done. Air control was even good enough to completely shut it down and save the left over charcoal.
Would I do it again? Probably not. With the time and money I have invested into this smoker I think I would have rather started with a WSM 14.5 or 18.
