It's FINALLY here: My BlueSmoke Offset Smoker!!!

Nice. Where did you locate your wood? I suggest you look for a fire basket for your fire box to get some air underneath the fire. It will help you get that blue smoke. Lone Star Grill has one and there is a guy whose shop name escapes me in Colorado that builds some nice ones for many different brands of smokers. Academy used to carry sacks of wood that were about $20 that would get you through seasoning and the first cook while you wait on the Monday delivery.


Good luck with your inaugural cook and post pictures. Lots of folks smoke a fatty to break in their new cooker.

Congratulations. Really a great looking smoker.
If your really anxious to get smoke rolling, a chimney full of lump for a coal bed and a sack of wood from a grocery store like HEB or a sporting goods store like Academy might work until the big load is delivered. :mrgreen:
Can’t wait to hear your thoughts on your first cook.

I agree with this. I’d get a bag of lump and a bag of splits from academy and fire that bad boy up!

Top shelf would be rough for ribs but nice to crisp up chicken skin.


HELL...YES! Been waiting for this post. Looks great. As for wood, if you have an ACE hardware or Academy nearby, you could buy some there if you're jonesin' to get a cook in this weekend.

Great looking rig right there. I share your trepidation with the upper rack. I got tired of taking my LSG upper rack out and hanging it somewhere when cooking brisket or pretty much anything I could place on the lower rack. At least my lower rack will slide out but that upper rack ended up in storage for several years.

A couple of weeks ago I decided to bring it out and cut it in half lengthwise. It still seems to be slightly in the way but I like my half/upper rack a lot better.

I went ahead and had my top shelf made with 1/2 the width to make it easier to get things in and out of the smoker

 
I had this basket made a few years ago by Fat Daddy Smokers in Wisconsin - have tried a few times in my Blue Smoke but believe it runs better with the fire directly on the firebox - the 3/8th thick firebox keeps a great coal bed



I recently had this made - allows me to build a fire directly on the floor of firebox, keeps the coals concentrated, and allows for both airflow and the ability to move the coal bed during a cook





 
OH man, I am beside myself excited!!!

Just a few hours ago, the shipper unloaded it and helped me move it up my driveway to my smoking spot.

I was actually quite amazed how easy this thing is to move on the heavy duty casters it came with over concrete. I imagine over any non-paved land would be another story altogether!!

Whew...this thing is heavy duty!! 3/8" steel all around. I had a few extras added...ball valve on grease drain, foldable stack, damper, hot plate on firebox, griddle plate for smoke chamber and Linseed Oil seasoning for exterior.

I was actually surprised that in the cook chamber, I had the upper shelf...I didn't order that, but will gladly accept it. I likely will pull that shelf out for most cooks, but on occasion I need something cooked that's small and needs extra heat maybe?? Maybe reheat some sausage links or something?
(I'm not quite sure what to use it for, since it is so high up and not much headroom up there).

Now...the sad part.....

My firewood doesn't arrive till Monday 25th...in the morning.

But once I get it, I'll spray the inside well with Pam or some similar oil spray, and light up a hot fire and burn it in/season the interior.

I believe I already have a Costco Prime Brisket in my freezer so likely that and maybe a chicken will be first things cooked.

Goodness....such a large cook chamber, I might throw on some other stuff friends have that want me to....not like it will cost extra fuel, eh?

Anyway...I'm really stoked about learning the new beast, how it acts, fire control, etc.

Reminds me..I guess I need to get some sort of shovel, some tongs, etc...for fire management?

That's a beauty! Nice to see that people are still buying cookers. I really miss seeing what is out there.
